This is my first time growing Lions Mane. When is the ideal time to harvest?

When is the ideal time to harvest lion's mane. I've read that when they get spongy on top they're ready. These are still firm. This is my first time growing them not sure if they get too big if it'll effect taste or texture. Serpico answered: You can probably pull them, if you already havent. LM is strain dependent on what it looks like, textures, and how well it handles higher temps. Once you start seeing it turn yellow, time to move hell of a block, too. Nicely done!
